Good ‘ol-fashion Pancakes

Golden cinnamon vanilla pancakes cooking in a non-stick pan

Good old-fashioned pancakes with my twist: a little cinnamon and vanilla in the batter. Everyone loves them, and they’re on the table in 20 minutes.

Ingredients

Dry

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • 1 Tbsp sugar
  • ¼ tsp salt
  • 1½ tsp cinnamon (my addition)

Wet

  • 1¼ cups milk
  • 3 Tbsp butter, melted
  • 1 large egg
  • 1½ tsp vanilla extract (my addition)

Method

  1. Sift or whisk the flour, baking powder, sugar, salt and cinnamon together in a large bowl.
  2. Make a well in the middle and add the milk, melted butter, egg and vanilla. Mix just until smooth.
  3. Heat a lightly oiled griddle or pan over medium-high heat.
  4. Pour about ¼ cup of batter per pancake. Cook until bubbles form and the edges look dry, 2 to 3 minutes.
  5. Flip and cook until golden on the other side. Repeat with the rest of the batter.

Serve with: Butter and real maple syrup. Keep cooked pancakes warm on a pan in a 200°F oven while you finish the batch.
