Aunt Betty’s Cinnamon Rolls

These are Aunt Betty’s cinnamon rolls, straight from her handwritten card. They’re quick rolls made with baking powder, so there’s no waiting on dough to rise.

Ingredients

Dough

  • 4 cups flour
  • 5 tsp baking powder
  • 1 cup sugar
  • 1 cup butter
  • 1 egg
  • 1 tsp vanilla
  • About 1 cup milk

Filling

  • A little milk for brushing
  • Cinnamon sugar: 1 part cinnamon to 4 parts sugar (for example, 2 Tbsp cinnamon and ½ cup sugar)

Method

  1. Start the dough. Heat the oven to 400°F. Stir the flour, baking powder and sugar together in a large bowl.
  2. Rub in the butter. Rub the butter into the flour mixture with your fingers until it looks crumbly.
  3. Add the wet. Mix in the egg, vanilla and about a cup of milk, adding the milk a little at a time until you have a soft dough you can roll out.
  4. Fill it. Roll the dough out on a floured counter, brush the top with milk and shake the cinnamon sugar evenly over it.
  5. Roll and cut. Roll the dough up into a log and cut it into slices. Set them on a greased or parchment-lined pan.
  6. Bake. Bake at 400°F for about 10 minutes, until golden.

Cinnamon sugar: Mix 1 part cinnamon to 4 parts sugar. Make extra and keep it in a jar for toast.
